ABOUT OUR MISSION

WE LOVE WINE!

Our goal is to bring people together for great wine in a fun, casual, and accessible way. We want to be a home for wine nerds, as well as people looking for a nice place to enjoy a glass of wine. 

 

We will always have a great wine list, and tasty food (e.g., cheese plates, paninis).  We offer structured tastings on Sunday (both in person and virtually through Zoom), and we’re hosting a Zoom-based blind tasting league night on Tuesdays.   We’re open to other ideas, too.

Erin Murphy - Sommelier

Erin is a Tallahassee native who loves good food, music, and of course, wine! She spent three years working as the General Manager at a local wine shop/bar, where she helped teach deductive tasting classes to the public, curated by-the-glass wine menus, and hand selected every wine that was put onto the shelves. Erin is a huge wine nerd who loves sharing her knowledge and love of wine with others, and loves to take people outside of their wine comfort zone. For her, the weirder the wine, the more fun it is! She is excited to provide Tallahassee with some of the best hand selected wines, while making Hummingbird a space where anyone can come have a unique, informative, and fun wine experience. 

Zeke Joiner - Cook

Ezekiel “Zeke” Joiner is a senior at Florida State University studying English-Creative Writing. Although he's our chef, he's on his way to becoming a certified somm through the WSET 2 curriculum. He is food-obsessed, and hopes to contribute to our great local food scene as a Tallahassee native. When he isn’t testing recipes or writing stand-up comedy, he can be found fishing or foraging for mushrooms.

Westin Bielecky - Kitchen Manager

Westin has a wide background of culinary experiences. As a former Chef's Apprentice/Sous Chef of multiple fine dining establishments, Westin is excited to direct Hummingbird's kitchen program. When not in the kitchen, he can be found at home with his partner, and their 3 cats and 1 dog, sipping a Busch Light. 

Mairin Moore - General Manager | Sommelier

Mairin has worked in hospitality in Tallahassee for the last 12 years and is passionate about wine, cheese, and community involvement! She loves providing a welcoming atmosphere for people to learn about and enjoy wine and each other’s company. Mairin started on the CMS track, but has switched over to the WSET, and attempts to learn something new about wine every day! Her professional background includes fine dining service, management, bartending, catering, and private events. In her free time, you can catch her outside: gardening, on the water, foraging, or hiking. She also enjoys cooking, pairing wine and food, and generally discussing all things related to eating drinking, and traveling!

Traylor Roberts - Managing Partner | Sommelier

Traylor's background ranges from Music Business to Coffee Wholesaling, and is excited to bring his varied knowledge to team Hummingbird! As one of our Sommeliers, he's passed his WSET 2 Certification, and is currently obsessed with learning about the Rhone Valley. You can find him behind the bar, organizing our wine club selections, managing our social media/customer service and hosting events! 

Greg Hajcak - Proprietor | Sommelier

Greg is a Professor of Psychology and Biomedical Sciences at Florida State University, where he studies the brain in relation to anxiety and depression. He is WSET Level 3 wine certified, and currently working on his WSET Level 4 Diploma. Greg oversees wine curation at Hummingbird, and hosts guided tastings.
